Summer Series: Mango Farro Salad

I purchased farro a while back after eating (and loving) this Farro salad made by Miranda of The Crunchy Radish. It sat in my cabinet for a while until this week when I decided to incorporate it into my lunch concoction. I basically combined all of the ingredients in my fridge with this lucky farro. Check out the recipe - it was delicious! 

Ingredients (and I encourage you to add/subtract things as you see fit!):

  • 4 persian cucumbers
  • 10 radishes
  • 2 scallions 
  • 1 shallot
  • 1 orange pepper 
  • 1 firm mango 
  • Cup of sliced cabbage 
  • Cup of slivered almonds
  • 2 cups of farro
  • 1/4 cup of chia seeds

Dressing

  • 2 lemons
  • Pinch of black pepper
  • Pinch of sea salt
  • 1 teaspoon honey dijon mustard 
  • 1 teaspoon of honey

Boil and cook the farro. It's just like making quinoa - easy peasy.

Wash and cut the veggies and mango into bite size pieces. Combine the farro in a bowl with the veggies and mango. Add dressing. Voila! You have yourself a delicious meal.
