Summer Series: Chunky Strawberry Salsa

As much as I love cooking in my small kitchen in my apartment, I love having the spacious kitchen in my summer home in the Hamptons. I definitely use the space as frequently as possible to whip up different concoctions. Last week I made this salsa with mangos and this week I tried it with strawberries. Either way it's fresh and delicious. I'm all about playing around with ingredients based on your personal tastebuds. This is an excellent dish to bring to a potluck, BBQ or to eat late afternoon as a snack. Since I cut the ingredients into pretty chunky pieces, it can also be eaten as a salad. It's all up to you and what you're craving. 

Ingredients (and I encourage you to add/subtract things as you see fit!):

  • 1 batch of cherry tomatoes
  • 10 strawberries
  • 2 shallots
  • 3 scallions
  • 1 orange pepper
  • 1 jalapeno 
  • 2 lemons
  • 1 lime
  • coarse sea salt
  • ground black pepper 
  • sesame seeds

Wash and cut the tomatoes, strawberries, shallots, scallions, orange pepper and jalapeno into bite size pieces. Cut the lemons and lime in half and squeeze the juice into a separate bowl (to get the pits out) and then add the juice to the chopped veggies and fruit. Add salt, pepper and top it off with sesame seeds. Voila! You have yourself a delicious salsa (or salad)!
